Pete’s Scratch Pancakes: A Love Story

The best pancakes you’ll ever eat.

Pancakes. A history.

I’m not sure what time of the year it is, but I recall the warmth of the morning sun beaming into our small kitchen. The room just felt inviting, cozy, and safe. I don’t recall what is being said or if there is music playing, it’s all background noise anyway. All I know is there is an aroma in the air of something sweet.

To my delight, a plate of pancakes awaits me, covered in rich syrup. Although, the pancakes are delicious enough without it, the cake is light and fluffy. There is a sweet yet slightly salty taste to the pancake, as it melts into mouth. I’m in love.

Pancakes have always been a part of my life. I recall fond childhood memories of Mom grilling up little “baby” pancakes for me, barely the size of a quarter dollar (feel like I’m showing my age). When’s the last time you’ve seen a quarter dollar?!

Anyway, the long and short of it is, I freakin’ love pancakes. The emotional, sentimental, and family connection is unbreakable: the very definition of comfort food. When I eat pancakes, an imaginary blanket is wrapped around me and my memory is flooded with Saturday morning cartoons, blanket forts, and a happy and carefree youth.

For years the box mixes haven’t been cutting it, the pancakes are too thin, the batter doesn’t taste like my childhood. So I ventured off to find the best homemade recipe I could find to mimic that classic comfort food I adore.

Enter Pete‘s Scratch Pancakes

An internet search for “the best homemade pancakes” yielded many results. All failures. I must have went through several batches before the angels in heaven brought forth: Pete’s Scratch Pancakes.

This recipe is simple, easy to make, easy to tweak, and downright delicious. I’ve committed the ingredients to memory, and have included some of my own that have turned these already awesome flapjacks into something legendary.

Ingredients:

  • 2 cups of flour
  • 3 tablespoons of sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs (beaten separately)
  • 1/4 cup of butter (melted)
  • 1 3/4 milk (we use almond milk)
  • 1 orange (for as much zest as one can yield)

Mix your dry ingredients, then add your wet ingredients, saving the orange zest for last. The zest is my specially added ingredient that takes these pancakes to the next level! The orange zest gives it a little zing and is like a secret treat for your taste buds.

*For an additional sweet treat, include semi-sweet chocolate chips!*

Serve with a syrup of your choosing (ours is all natural Maple Syrup). You’ll devour as many pancakes as you can, they are that good.

Video Collaboration!

It’s been a fun quarantine, and being ordered to stay at home with my besties is even better. This lockdown has brought our family closer and has provided us all an opportunity to “stop and smell the roses” if you will.

In our downtime, me and the lovely Mrs have joined creative forces and have produced this short video. No talking, just sounds of my beautiful wife in our country kitchen making a delicious meal for our family.

I’ll admit, when my spring races started cancelling and dropping off one-by-one, I immediately started to lose hope. All of the training, all of the time (and not to mention money) invested was being thrown out the window… or was it?

Race Recap: 465 Challenge

Virtual Challenge

The 465 Challenge is a 53 mile virtual race that runs from January 1 to February 29 (2020). Participants have from the beginning of January to the end of February to complete 53 miles either walking, running, jogging, swimming, or biking. This challenge is a great way to make that New Year resolution stick!

Another bonus is that any participant that completes multiple intervals of 53 miles are considered “loopers” and join the Looper Club. And, if you complete the 53 miles within 24 hours, you join the 24 hr Club!

My Strategy

From the beginning, my goal was to compete at least 3 loops over the course of the challenge, through running only. 156 miles over the course of the challenge seemed pretty obtainable as long as the weather held out.

I’ll admit, Jan – Feb in Pennsylvania can be a bit of a gamble, especially since those are typically my lowest monthly totals when it comes to running. Throw in the added bonus of our local YMCA shutting down, and I knew this was going to be a challenge that was going to force me to get creative if the weather went foul.

And getting creative I did! I was determined to only track running miles only. I incorporated my long runs and even a half marathon into my schedule to make sure I hit my goal! The 465 Challenge was the perfect way to plan out my otherwise boring start to the year.

Mild Winter = Better Mileage

As luck would have it, January through February was actually quiet mild for our region. Instead of snow and ice, the Northeast saw a lot of rain! I felt like the entire last two months have been nothing but a wet soupy mess.

Did I mention it rained a lot this winter?

Despite the rain, I managed to complete my 3 loop goal over the course of the 465 Challenge. It helped that I had a handful of long runs on nice clear Sundays and not to mention the Squirrely Tail Half Marathon to boot.

This challenge couldn’t have gone off any better, and it was so rewarding to be able to maintain my fitness levels over the dark winter months. I’m glad I signed up for the challenge and I’m even happier I met my goal!

Overall Impression

The 465 Challenge was a great way to stay focused on training through the darkest winter months. The online community and encouragement from other participants really helped me stay focused and kept my on-track on days I was lacking motivation. This challenge was a great way to start 2020 and to really hammer out those early New Years resolutions.

The swag was pretty cool as well! Participants received a pretty unique medal, and if you added it to your registration a nice quality shirt!

Ambassador Programs: Things to Consider

Many companies offer an ambassador program of some sorts to their social media following. These programs are a great way for companies to gain exposure in their particular industry. Since I’m a runner this will primarily focus on the running community, but I’m sure there is a program for just about every industry you can imagine.

What’s unique about an ambassador program is that it allows a company to utilize its followers on social media as means for low-cost, if not free, advertising. What’s also appealing about these programs is that the advertising is done by its actual users, and comes across as an authentic endorsement.

Again, all of this comes at a minimal cost to the company, when compared to traditional advertising. Most ambassador programs include a 30-50% off discount on products and services. Companies want you to buy and support their brand, so they’re going to entice you with all kinds of special offers and deals. And since this is an exclusive program, it creates quite the buzz on social media.

Some companies go above and beyond and not only offer a sweet discount, but also send its ambassadors care packages that include some of their featured products and or services, and most importantly ambassador exclusive swag. I mean, c’mon, how else will someone identify you as an ambassador without that sweet exclusive branded gear

Being an ambassador can also grant you access to exclusive online communities or groups, and puts you in the loop (so to speak) on new and upcoming products, special releases, etc. And lastly, it can also help boost exposure for everyday athletes like you and me, by way of the company featuring your social profiles on their site, or commenting or tagging you in a post.

Mushroom Cap Half-Marathon: Pre-Race Checklist

Here we are the night before the race, and here I am frantically putting together tomorrow’s kit.

1. Let’s talk tech: My Aftershokz Trekz Air headphones are a MUST! I’m not sure if this is a sign that I’m getting older, but I love listening to podcasts or audiobooks on long runs. I find that conversations help the miles pass and sometimes a good story carries me through the tough parts of a run. Tomorrow I’ve got the BibRave podcast lined up to keep me company (I’m behind purposely by 4-5 episodes). Throw in my trusty Garmin watch and I’m all set!

2. My Ultimate Direction vest to tote my stuff is also at the top of my list. I have been able to reduce my nutrition for a half marathon to a single Hydrapak(R) water bottle filled with Tailwind Nutrition and one or two Stinger Gels. I have found that most race courses provide enough hydration and gels for those who don’t carry their own supplies, but I like to be self-sufficient.

3. It’s going to be COLD tomorrow so as far as clothing: gloves, my orange lightweight windbreaker, shorts and leggings are a must-have. Throw in my trusty BocoGear BibRave hat, BibRave Buff, and of course my BibRave shirt. GO TEAM ORANGE!

4. I’m going to coat myself in BodyGlide, no joke. Actually I’m going to hit a few target areas: collarbone, shoulders, neck, inner thighs, hips, nips, pretty much all areas where friction can and will ruin a day.

Tomorrow’s race has other things to look forward to as well, like the post-race after party at the Creamery and of course spending some time with my BibRave buddies!

The course sounds like it’s going to be a challenging but good time! The few people I’ve talked to over social media mentioned the hills…. repeatedly, so I guess I’ll know what to expect.

Lately I’ve been leaning into my training and knowing that I can run comfortably at a 10 min/mile pace without feeling uncomfortable or like I’m going to bonk. And I suppose that’s what it’s all about, running a race comfortably and enjoying the course and scenery without focusing on time and “beating” those imaginary demons in my head.

I’m going into tomorrow’s race with an open mind and sticking to my plan of just enjoying the course… and of course having a good time.

The added benefit of having a Trainer

Make no mistake, you can find just about everything on the internet. So it should come as no surprise that when looking for a run coach, the internet has that too!

But who can you trust? If you search for an online trainer you’re bound to be flooded with results, each and every one claiming a specific speciality or goal pace they can help you achieve. When I first started looking for help, I found countless training plans and all sorts of conflicting advice. The process was overwhelming.

Enter: The Power of Social Media

Just when I had basically given up in finding a trainer, a fellow BibRave Pro Janell reached out to me through Twitter and offered to take me on as a client.

It was during a weekly Bibchat where a lot of the questions were based on goals and how we work on achieving them. I saw a few of Janell’s replies and got the immediate vibe that she knew what she was talking about.

After a quick email exchange we got setup and within a few weeks training began.

Personalized Training Plans

One thing I noticed off the bat was the personalized training plans that actually made running really fun and enjoyable. Gone were the days of me hitting the pavement and just running as hard and as fast as I could. With structured plans I was hitting the road with purpose and a set goal in mind.

For a beginning runner the tactic of just going hard every time will yield results… but also lead to injury and burnout. Speaking from first hand experience, the all-out method I employed before coaching made running more about punishment than accomplishment.

Lesson learned: Get a trainer and get specific plans just for you that make running fun again.

The Importance of Rest Days

Resting wasn’t a concept I was familiar with, even though it’s covered in the numerous running books I’ve poured over during the last 4 years. Rest was a concept that I thought only elite athlete’s required, surely not a novice runner like myself.

When I saw “rest” on my training plan I struggled with not being able to run, but after a few weeks of training, rest days were a reminder that everyone needs a break now and then.

Lesson learned: Everyone needs rest, not just the elite.

Accountability is Paramount

If anything else, having a trainer carries the added level of accountability. There were days when the sun was blazing and the humidity was oppressing and I would look at my training calendar and frown.

It wasn’t that I didn’t want to run, it was just easier to sit on the couch and procrastinate. But when I would wake up before the sun, or decide to run later in the evening I would notice the cooler temps that came with it, and I knew I could tackle my workout. Most importantly, I couldn’t let my trainer or myself down for not getting in that workout.

Throughout the entire process Janell would check in and it was a much needed boost to keep me going!

Lesson learned: find a trainer that’s encouraging and supportive, but knows how to push you to achieve your goals.
